It’s My Birthday Everyday
Today In Kim’s Korner I want to talk about the gift of mercy. When I say I feel it’s my birthday everyday, that may sound silly to people, but allow me to explain. I have never pretended to have “five 21st birthdays in a row” and I have never been given over to the idea that “A lady never tells her age”. Whenever I’m asked, I always take the opportunity to tell my age. That’s if I can remember it. It’s a shame when your children have to remind you on how old you really are. I’m grateful God has kept me, so I never keep my age a secret…and I’m still very much a lady!
So last night as I pondered some of the days events, I thought about my age and what birthdays really mean to people. I thought about how excited people get when their birthdays come around. I thought about how excited I am for each day I awake day as I am for another birth year. There was something in that moment where I thought “each day we wake up, we have another birthday”.
Your Gift Is Salvation
Yes I know there is a specific day that I celebrate the “day I was naturally born on”. But what a wonderful blessing it is to know that every morning when I wake up, I have the gift of brand new mercies ready to be opened. Today, I encourage you to celebrate your life each day like it’s a new spiritual birthday…because it is! Receive the gift of brand new mercies every morning wrapped up within salvation. Today, I celebrate life and I celebrate you!

Recipe For The Ultimate Birthday Cake
Ingredients:
For The Very Vanilla Cake
- 2 1/2 cups (315 g) cake flour
- 3/4 cup (90 g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 4 ounces (1 stick/115 g) unsalted butter, softened, plus more for the pans
- 1/2 cup (100 g) vegetable shortening, at room temperature
- 1 3/4 cups (350 g) granulated sugar
- 2 tablespoons pure vanilla extract
- 1 large egg
- 1 cup (240 ml) ice-cold water
- 1/2 cup (120 ml) whole milk
- 1/2 cup (120 ml) well-shaken buttermilk
- 1 cup (190 g) rainbow sprinkles
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
For The Very Vanilla Frosting
- 1 1/2 cups (300 g) granulated sugar
- 1/3 cup (40 g) all-purpose flour
- 11/2 cups (360 ml) whole milk
- 1/3 cup (75 ml) heavy cream
- 12 ounces (3 sticks/340 g) unsalted butter, softened but cool, cut into small pieces
- 1 1/2 teaspoons vanilla paste
- 1 teaspoon pure vanilla extract
For The Décor
- 1 to 1 1/4 cups (190 to 240 g) rainbow sprinkles
